So, I hope you have been enjoying your weekend? The sun is still out in full blast (hooray), it just puts everyone in such a great mood. It's lovely having friends and family over, just relaxing in the garden, catching up over a glass of wine and something to eat. When people come round in the summer I love to make them my summer time pancakes. So, I thought I would share the recipe with you. They are soooo easy to make! Hope you enjoy them.

Makes 10-12 mini pancakes
Firstly, measure out one cup of plain flour and one cup of full fat or semi skimmed milk. Pour these ingredients into a large mixing bowl. Then add one large egg. Whisk all the ingredients together until it resembles a batter mix.
Reduce the heat to a low flame and cook both sides of the pancake until golden (repeat for the other pancakes). Meanwhile, get a saucepan and add two cups of frozen or fresh berries and four tablespoons of water. On a medium heat, cook the berries until they have warmed through.
Plate up the pancakes and pour the berries over them. You can also add some natural yoghurt or ice cream to top your pancakes. Voilà, so simple even I can make it!
